The next day the stockpot is reheated and thickened with a roux made from flour and oil then the second set of ingredients are added. These can be a wide range of seafood, a whole jointed chicken, okra and frozen Cajun vegetables, three pounds of sausages, gumbo file, chilli and thyme. It is then cooked until tender and served with rice.</p>
<p>After the gumbo there might be baked goose or chicken and homemade cornbread sometimes with a dressing. It is also common to have a salad and maybe a loin of pork. These are also served with candied sweet potatoes, made with sweet potatoes, margarine, cinnamon, sugar, orange rind and vanilla cooked up together until the chopped potatoes are tender. This does not mean that the Chinese do not enjoy their Christmas festivities, nor does it mean that they don’t have traditional Chinese Christmas recipes. The idea that Christmas is a holiday when all the family gather together; is as popular in China as it is in the West. Only one percent of Chinese people are Christian-the pervasive influence of Communism and traditional Eastern religions, has meant that Christmas in China is not really seen as a time for religious reflection. It is not seen as a major national holiday but it is still a time for traditional Chinese Christmas recipes and the opportunity to go out and enjoy yourself with family and friends.</p>
<p>In the West it is common to have a special Christmas cake made especially for the festivities. This is usually a very rich fruit cake that is then covered in marzipan and hard icing.
